Mastering the Art of Chinese Cooking

As you know, China is a nation of great gourmet cuisine. Along with the people’s love for food, they have mastered the art of culinary knife skills. Did you know? Chinese chefs own only one knife. These knives are traditionally crafted making them durable to wear and tear. In the 2nd week of Mastering the Art of Chinese Cooking. We are going to look at “Knife Skills”. In Chinese cooking, the way the knives are used greatly affects the character and taste of each dish. There are four techniques in cutting used in the chef’s daily activities. The cuts are vertical, horizontal, slanted, and carving. All these cuts are essential to achieve perfection for certain types of dishes. We are going to learn/practice the 4 ways of cutting by making “Chen’s Pineapple Chicken with Cashew Nuts”. There are Vegetarian/Vegan options on request.
